David’s ANZAC biscuits

The ANZAC spirit is alive and well in the YourLifeChoices office when David brings in another batch of his yummy ANZAC biscuits.

1 cup rolled oats
3/4 cup desiccated coconut
1 cup plain flour
1 & 1/2 teaspoons bicarbonate of soda
2 tablespoons boiling water
1 cup sugar
pinch of salt
125g butter
1 tablespoon golden syrup

Pre-heat oven to 150°C.
Mix rolled oats, sifted flour, sugar, salt and coconut in a bowl.
Combine butter and golden syrup over a gentle heat, stirring until melted.
Mix soda with boiling water, add to the melted butter mixture, then stir into dry ingredients.
Spoon teaspoonfuls of mixture on to greased oven trays; allow room for biscuits to spread out as they cook.
Bake in 150°C for 20 minutes.
Cool on trays.

Makes approximately 36 biscuits.
