Easy-Peasy Shortbread

Buttery and perfect with a cuppa, our Easy-Peasy Shortbread will delight the grandkids and adults alike. Here’s an idea: why not get the grandkids to help you make them?

Serves: 20

Time: 20 minutes

Ingredients

  • 150 ml flour
  • 30 ml rice flour
  • 30 ml caster sugar
  • 10 tablespoons salted butter


Method

Preheat oven to 190°C. In a bowl, sift the flour and rice flour together. Cut butter into pieces and add to the flour mix. Kneed the mixture with your hands until a firm dough is formed. Place on a floured board and roll until it’s just less than one centimetre thick. With a sharp knife cut into small triangle and place on a tray lined with baking paper. Prick each triangle with a toothpick a few times and sprinkle sugar over the top. Bake in the oven 10 minutes, until lightly browned. Remove from oven and cool before eating.
