Ginger biscuits are a delicious treat but often very expensive to buy in shops. This recipe is a tried and tested favourite which will enable you to enjoy Ginger Biscuits every week.
Makes 12 biscuits
125g butter or margarine
100g caster sugar
75g dark brown sugar
250g of self raising flour
1 teaspoon ground ginger
150g chopped crystallised stem ginger
Melted dark chocolate to dip biscuits – optional
Cream butter or margarine with the two sugars.
Add egg and ground ginger. Then gradually add salt and flour ensuring all ingredients are combined.
Chop ginger into small pieces and add to the biscuit dough.
Roll into balls and press into a greased biscuit tray.
Bake at 180’C for 10-15 min till golden brown.
Allow to cool and dip half in melted chocolate for a truly decadent treat
