Lovely Lemon Slice

There is nothing better than sitting down with a hot cuppa and a delicious slice. Our Lemon Slice is delightfully tasty and not too tart. Why not give it a try this weekend?

Serves: 24 slices

Time: One hour

Ingredients

Crust

  • 2 cups plain flour
  • 1/2 cup icing sugar
  • 1 cup margarine

Filling

  • 4 eggs, beaten
  • 2 cups sugar
  • 1/3 cup lemon juice
  • 1/4 cup plain flour
  • 1/2 teaspoon baking powder

 

Method

Preheat oven to 180°C. Mix flour and sugar for crust, and cut in margarine. Press into a nine-by-13 inch baking pan and bake for 25 minutes. In a bowl, combine the filling ingredients, and pour onto the baked crust. Bake for another 25 minutes. Sprinkle with icing sugar and cut the slice into 24 pieces.
