Enjoy these nutty sesame cookies without the added refined sugar. Sweetened with medjool dates, these cookies will satisfy that sugar craving without the added guilt.
Time: 25 minutes plus time to cool
- 1 1/2 cups (180g) whole wheat flour
- 1/2 tsp bicarbonate soda
- 1/2 tsp salt
- 1/2 cup tahini
- 1/4 cup olive oil
- 2/3 cup date paste*
- 1/3 cup sesame seeds
Preheat oven to 160°C.
In a large mixing bowl, combine the flour, bicarbonate soda and salt.
In a separate bowl, whisk together the date paste, tahini and olive oil.
Mix the wet ingredients into the dry, creating dough sticky enough to form into balls. If it is too wet, add a touch more flour or thin it with a little milk.
Cover bowl and place in the fridge for 30 to 60 minutes to firm.
Using your hands, roll dough into 2cm round balls.
Put sesame seeds into a small bowl and roll each ball through to coat.
Place sesame ball onto a baking tray lined with baking paper. Press to flatten a little.
Bake cookies for 10 minutes, or until they’re golden.
*Make the date paste by adding 2/3 cup hot water to a cup of pitted medjool dates. Allow to soak for an hour and then blend in a food processor until smooth.
