Stone fruits are coming into season, making them more affordable and at their best. Peta’s Peach and Cream Cheese Slice is a little bit naughty but whole lot nice!
100 g softened butter
3/4 cup caster sugar
1 & 1/2 cups self-raising flour
1/2 cup desiccated coconut
1/4 cup semi-skimmed milk
750g peaches, peeled, stoned and sliced
250g low-fat cream cheese
4 tablespoons honey
Preheat oven to 190’C and grease and line a slice tin
Put the butter, sugar, eggs, flour, coconut and milk into a bowl and mix with an electric beater until blended.
Spread into the slice tin.
Arrange the peach slices on top of the base.
Blend the cream cheese, honey and egg together and pour over the top.
Bake for 20-25 minutes until golden and well risen.
If feeling particularly decadent, serve with whipped cream.
