This sticky date pudding is an oldie but a goodie. Served with cream it makes a lovely treat for dessert.
Ingredients (serves four)
- 90g dates, pitted and chopped
- 150ml water
- 1/2 teaspoon bicarbonate of soda
- 30g butter, softened
- 1/3 cup caster sugar
- 2/3 cup self raising flour
- 1 egg
- 1/2 teaspoon vanilla extract
- 1/2 cup brown sugar
- 1/4 cup cream
- 60g butter, softened
- 1/4 teaspoon vanilla extract
Place the dates and water in a saucepan and bring to the boil. Remove from the heat, stir in the bicarbonate of soda. Let stand for 30 minutes.
Cream together the butter and sugar. Add the egg and gently fold in the flour, followed by the date mixture and vanilla.
Pour into a greased cake tin, bake at 160ºC for 35-40 minutes or until a skewer placed into the middle comes away clean.
To make the sauce, combine all the ingredients in a saucepan and bring to the boil. Simmer for three minutes.
Cut the pudding into wedges, pour over the sauce and serve with cream.
