Ingredients
250g Copha
1 cup coconut
1 cup icing sugar
1/4 cup crushed nuts
1 cup powdered milk
3 cups rice bubbles
1 cup mixed fruit
Method
Melt the Copha in a pan over low heat (Don’t Boil!)
Add dry ingredients to the pan and mix together.
When Press into a flat metal pan (pre-greased), a lamington tray would work also.
Place into refrigerator (NOT freezer) until firm.
Remove from refrigerator and cut into slices/squares and serve!
