For those short of time, Corey’s Coconut Chicken Stew will allow you to prepare the ingredients and let the microwave do the cooking.
450g skinless, boneless chicken breast, cut into bite-sized chunks
300g diced tomatoes (from a can)
1 cup coconut milk (from a can)
1 cup chicken broth
250g frozen baby lima beans
1 cup halved baby carrots
1 onion, chopped
1 cup peeled potatoes, cut into 1-inch chunks
1 tablespoon cumin
1 tablespoon curry powder
Salt and pepper to taste
Mix all the ingredients together in a large microwave-safe bowl. Cover tightly and microwave on high for 20-30 minutes (will depend on your microwave).
