Easy Cajun Chicken

  • 450g chicken breast fillets
  • 4 tablespoons mayonaise
  • 1/4 large cabbage
  • 3 green onions
  • 4 teaspoons Cajun spice


Chop chicken in to strips and then heat a pan on a medium high heat. Rub chicken with a little oil and salt and cook chicken until browned on the outside and just cooked through.

Slice cabbage as finely as possible and toss in a bowl with the mayonnaise and green onion, and season well. Once the chicken is cooked, place in a paper bag and sprinkle the spice and shake. Serve chicken with the cabbage salad.
