Lean Chicken Patties

These simple peppered chicken patties are delicious on a bun for lunch or with an Asian salad for dinner. You can even make them in advance and freeze.

500g chicken mince
125g breadcrumbs
1/2 apple, peeled and grated
1 small onion, chopped
75g coarsely crushed black peppercorns
Handful flat-leaf parsley, coarsely chopped
1 beaten egg

Combine all the ingredients, except the peppercorns.
Shape into six patties and press both sides in the crushed peppercorns.
Barbecue or grill patties and serve with fresh bread or an Asian salad.

Quick Asian Salad
Great with chicken, seafood or meat, this quick and easy salad is a terrific dinner standby.

125ml cup vegetable oil
75ml balsamic vinegar
3 teaspoons sugar
1 tablespoon soy sauce
1/4 teaspoon ground ginger
Salad greens of your choice
100g bean sprouts
100g fresh snow peas

In a jar with a tight-fitting lid, pour the oil, vinegar, sugar, ginger and soy sauce and shake well.
In a bowl, combine the greens, bean sprouts and snow peas.
Drizzle with dressing and toss to coat.
