Quick and easy to make. Try this Portuguese Chicken Burger recipe. It’s delicious!
1 teaspoon olive oil
2 teaspoons fresh lemon juice
1/2 teaspoons dried chilli flakes
1 crushed garlic clove
1/4 teaspoon crushed garlic, extra
1 crusty bread roll
1 chicken thigh fillet
1 tablespoon whole-egg mayonnaise
2 baby cos lettuce leaves
1 tomato, thinly sliced
In a bowl, place the oil, lemon juice, half the garlic, chilli flakes and a pinch of salt. Mix together with a whisk.
Add the chicken into the mixture and turn over. Cover with plastic and place in the fridge to marinate for 15 minutes.
While the chicken is marinating, combine the extra garlic and mayonnaise in a small bowl and season with pepper to taste. Preheat BBQ or Chargrill to medium-high.
Drain the chicken from the marinade and cook for 5 minutes on each side or until cooked through.
While the chicken is cooking, in a preheated oven grill, cut open your bread roll and place it on a baking tray cut-side up and cook until toasted.
Remove the bread roll from the griller and place on your plate. Spread with half of the mayo mixture and top with tomato, lettuce, chicken and remaining mayo mixture.
