1 smoked chicken breast, sliced
150g baby spinach
450g can baby beetroot, drained and halved
400g can chickpeas, drained and rinsed
1 avocado, cubed
1/4 cup olive oil
2 tablespoons lemon juice
Toss the smoked chicken, spinach, beetroot, chickpeas and avocado together in a serving bowl. Combine the olive oil and lemon juice and drizzle over the salad.
