Speedy Tomato Chicken

This flavoursome meal is quick and easy to make. Ready in just half an hour and only one pot to wash! 

Ingredients
Serves 4
4 chicken thighs
1 sliced red onion
400g tin chopped tomatoes with herbs
400g tin mixed beans
2 teaspoons good-quality balsamic vinegar

Method
Fry the chicken in a non-stick frypan, until golden brown (approximately five minutes).  Add the onion and cook for a further five minutes.  Combine the remaining ingredients and simmer for 10 minutes. Serve the crusty bread to mop up the juices or with your favourite green vegetables.
