Chow Mein

This old favourite has a mild curry flavour. So easy to make and is a great way to get more vegetables into your diet.


  • 300g cabbage, chopped
  • 100g mushrooms, diced
  • 2 sticks celery, diced
  • 125g green beans, chopped
  • 1/2 red capsicum, diced
  • 1 onion, diced
  • 500g beef mince
  • 1 tablespoon olive oil
  • 1 packet chicken noodle soup
  • 1/4 cup long grain rice
  • 1 tablespoon soy sauce
  • 2 cups water
  • 2 tablespoons tomato sauce
  • 1/4 teaspoon curry powder

Heat the oil in a large pan and cook the onion and mince. Add soup, rice, tomato sauce, soy sauce, curry powder and vegetables.  Stir in the water and bring to the boil. Reduce the heat and simmer until the rice is cooked.
