No holiday slideshow is complete without snacks to fortify your viewers, and these homemade After Dinner Mints slip down a treat with a cup of tea.
2 cups dark chocolate pieces
2 1/2 cups pure icing sugar
1 tablespoon vegetable oil
2 teaspoons milk
1/4 teaspoon peppermint essence
Grease a 20cm square cake tin. Line the base and sides of the cake tin with baking paper, leaving an overhang on all sides.
Melt half the chocolate by either microwaving for one to two minutes or by putting into a double boiler and stirring over a low flame. Pour the melted chocolate over the base of the prepared tin and refrigerate until set (approximately 15 minutes).
While the chocolate is setting sift icing sugar into a bowl and stir in oil and milk to form a paste. Microwave for two to three minutes, stopping every 30 seconds to stir, until smooth. Stir in peppermint essence and set aside to cool slightly.
Once chocolate is set pour peppermint mixture over the chocolate in the cake tin, spreading it out so it forms an even layer and reaches the edges. Refrigerate until set. While the peppermint is setting melt the other half of your chocolate, then when the peppermint is set pour the chocolate over the top. Refrigerate until the top layer of chocolate has set.
Lift chocolate from pan using the overhanging baking paper and, using a warm knife, cut into squares.
