This baked lemon delicious is oh-so easy to make and served with cream will be sure to impress.
- 2 tablespoons butter
- 2 cups sugar
- 4 tablespoons self-raising flour
- Juice and zest of 2 lemons
- 2 cups milk
- 4 eggs, separated
Preheat the oven to 180°C.
Cream the butter and sugar together. Add in the flour, lemon juice and zest, milk and well-beaten egg yolks. Mix well.
Beat the egg whites until stiff and fold into the other mixture. Pour into a buttered glass dessert dish.
Set in a pan of water and cook for 45 minutes or until golden-brown on top.
