Not your traditional bruschetta recipe, this berry version is a sweet alternative perfect for brunch or dessert.

- 150g frozen mixed berries
- 4 slices raisin bread or brioche
- 60g cream cheese
- ¼ cup honey
- ½ tbsp. icing sugar
- Cream to serve
- Mint leaves to serve
Combine the mixed berried and icing sugar in a saucepan over low heat. Stir occasionally for five to eight minutes or until berries are thawed and juicy.
Meanwhile toast the raisin bread or brioche before spreading with the cream cheese.
Drizzle the honey over the four slices of toast evenly and top each slice with the berry mixture.
Serve with cream and a few mint leaves.
