These cheeky Cheesecake Tarts serve 12 and only take 15 minutes to make. Great for when you don’t have time, but have a dozen mouths to feed.
Time: 15 minutes
- 110g cream cheese
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon grated lemon zest
- 1/4 teaspoon vanilla extract
- 3 tablespoons icing sugar
- 12 vanilla wafers
- 12 fresh raspberries
In medium bowl, add the cream cheese, lemon juice, lemon zest and vanilla, and beat with an electric mixer until smooth. Next, add in the icing sugar and mix. Spoon a heaping tablespoon of mixture on each wafer, then top with a berry.
