Chocolate and Cherry Biscuits

Cherries are in season. It’s the only time in the year you can buy delicious, fresh cherries on the cheap. So if you’re a cherry lover, then why not bake our Chocolate and Cherry Biscuits?

Serves: 12 biscuits

Time: 20 minutes

Ingredients

  • 1/3 cup plain flour
  • 1/3 cup wholemeal flour
  • 1 1/2 cup traditional rolled oats
  • 3/4 cup packed brown sugar
  • 1 large egg, lightly beaten
  • 85gdark chocolate, finely chopped
  • 6 tablespoons unsalted butter
  • 1 cup cherries, pitted and halved
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

 

Method

Preheat the oven to 190°C. In a bowl, combine the two flours. Add the rolled oats, baking soda and salt into the flour mixture. Stir until combined. Set aside.

In a saucepan over a low heat, melt the butter, remove from the stove and add the brown sugar, and mix until smooth.

Add the sugar mixture to the flour mixture and beat at a medium speed using an electric mixer until combined. Add the vanilla and egg into the batter and gently fold in the cherries and chocolate with a spatula.

Lightly grease your baking tray (or line with baking paper), and then drop spoonfuls of the batter onto the tray, about one centimetre apart. Bake for 12 minutes. Allow to cool before enjoying.
