YOURLifeChoices member Ron has kindly shared his recipe for the easiest Christmas fruit mince.
Ingredients (Makes about 24 pies)
- 200 g mixed fruit.
- 2 tablespoons golden syrup
- 1/4 cup brandy
- 1 teaspoon lemon rind
- 1 teaspoon mixed spice
Place all ingredients in a saucepan. Simmer for five minutes, stirring occasionally. Allow to cool.
To make the pies, use your pastry of choice and fill the cases with the fruit mince.
Tip – the fruit mince can be made three months ahead and kept in the refrigerator until you are ready to use. The longer the mince is left the better as the brandy will flavour.
