Five-Minute Banana Muffins

1 large coffee cup
4 tablespoons wholemeal plain flour
3 tablespoons demerera or brown sugar
1/3 teaspoon baking powder
1 pinch salt
1/4 banana, mashed to a pulp
2 tablespoons sunflower oil
1 tablespoon plain yoghurt
2 tablespoons whisked egg
2 tablespoons water
1 splash vanilla extract

Place all of the ingredients into the coffee cup and stir until mixed. As the mixture will rise, your coffee cup should be about two thirds full. Sprinkle with sugar and place it in the microwave for three minutes, until the mixture has risen over the top and is sticky and bubbly. Take the cup out of the microwave and leave it for ten minutes so that the top sinks back into the cup. Finish it off with some walnuts, cinnamon, cream or more sugar.
