Fluffy Vanilla Cupcakes

If you have a friend coming over for afternoon tea, then our Fluffy Vanilla Cupcakes for two can be whipped up in just 25 minutes.

  • 1 egg white
  • 2 tablespoons sugar
  • 2 tablespoons butter, melted
  • 1 teaspoon vanilla
  • 1/4 cup flour
  • 1/4 heaping teaspoon of baking powder
  • pinch salt
  • 1 1/2 tablespoons milk

Preheat oven to 180°C and line a muffin tray with two cupcake liners. In a bowl, add egg white and sugar, and whisk until blended. Mix in vanilla and melted butter, and stir until combined. Add flour, baking powder and salt, and stir until smooth. Then stir in milk. Divide batter equally between the two cupcake liners. Bake for 10 minutes. Let cool completely, then frost if desired.
