Honey Walnut Cupcake

  • 2 tablespoons almond meal
  • 1 tablespoon flour
  • 1 pinch salt
  • 1 pinch baking soda
  • 1 egg white
  • 2 teaspoons honey
  • 1 tablespoon chopped walnuts


Preheat oven to 180°C. Line one muffin cup with baking paper or cupcake liner. In a small bowl, mix the almond meal, flour, salt and baking soda. In a separate bowl, stir together egg white and honey. Blend the wet ingredients into the flour mixture and then add in the walnuts. Ladle the batter into the lined muffin cup. Bake for 17–20 minutes or until baked through. Let cupcake cool before enjoying.
