This Low-fat Mango Fool is a delicious snack for a warm day, or make it the night before and enjoy for a special breakfast over the weekend.
Ingredients (serves 2)
75 g low-fat ricotta cheese (fresh, not spreadable)
1/4 cup low-fat vanilla custard
1 large ripe mango, peeled and chopped
Blend ricotta in a food processor until creamy. Add the custard and mix until just combined. Transfer the mixture to a bowl, clean the food processor, and then process the mango until pureed. Fold 2/3 of the mango puree into the ricotta mix, keeping the other 1/3 to the side. Spoon the mango and ricotta mix into a glass and cover with the remaining puree. Cover and refrigerate for at least 15 minutes (longer if possible).
