We wouldn’t blame you if your mouth watered at the thought of eating our Luscious Lemon Pudding. Just enough for two, it makes a perfect dessert in winter when lemons are in season.
Time: 40 minutes
- 50g unsalted butter
- zest from 1/2 lemon and 1/4 cup juice
- 100g sugar
- 1 egg
- 50g self raising flour
Preheat oven to 180°C. In a medium saucepan, melt the butter and add the lemon zest. Remove from the heat and stir in half the sugar, then add the egg continuing to stir. Lightly mix in the flour until just combined. Divide the cake mixture between two ramekins. Combine remaining half of the sugar with a quarter cup boiling water and the lemon juice. Pour over the cake mixture. Cover with a large piece of foil and bake for 25 minutes. Remove foil and bake for another five minutes until puddings are golden.
