- 75g low-fat ricotta cheese
- 1/4 cup low-fat vanilla custard
- 1 large ripe mango, peeled and roughly chopped
- 4 pieces almond bread
Place ricotta in a food processor and process until creamy. Pour in custard and pulse until just combined, then transfer to a large bowl. Clean the food processor bowl before processing the mango until smooth. Put aside 1/3 cup mango puree. Fold remaining mango puree into ricotta mixture. Half-fill two, one-cup capacity glasses with mango-ricotta mixture and then spoon over extra puree. Cover and place in fridge for 15 minute and then serve with almond bread.
