Simple Flourless Banana Pancakes

If you’re after a nutrition-packed brekky, then this is a great recipe to try out. Such a simple recipe, these pancakes are super easy to whip up at any time, and are a great way to use up those overripe bananas.

Serves: Three
Time: 10 minutes

Ingredients

  • 1 medium ripe banana (the riper, the better!)
  • 2 tablespoons quick oats*
  • 1 large egg, beaten
  • 2 tablespoons chopped walnuts (optional)
  • 1 tablespoon butter

*Check label for gluten-free

Method

In a medium bowl, mash ripened banana until smooth using a fork. Mix in egg and oats.

Melt a dollop of butter in a large non-stick frying pan over medium-low heat.

Pour batter to make about three pancakes. Top with walnuts and cook for 3–4 minutes. Flip and cook another 3­–4 minutes, until golden.

Serve immediately with maple syrup or honey as desired.
