2L vanilla ice-cream (also works with soy ice-cream)
350g mixed berries (frozen or fresh)
120g unsalted pistachio nuts, shelled and chopped
2 teaspoons grated orange rind
Honey to serve

Line a large bowl or pudding basin with a double layer of cling wrap. Place the ice-cream into another large bowl, and stir until slightly softened. Add the berries and pistachios and mix in gently. Tip mixture into glad-wrap covered bowl, and freeze for at least eight hours.
Freeze the serving platter for ten minutes, then place serving platter over the ice-cream bowl. Turn pudding onto platter, remove the plastic wrap and then refreeze for ten minutes. Serve with berries, pistachios, and a drizzle of honey.
