These baked eggs with chives and fetta are an easy snack to whip up, and best of all they only take 15 minutes to make from start to finish. Sandwiches are so last week.
Ingredients (makes 4)
1/4 cup low-fat thickened cream
20 g low-fat fetta
1 tablespoon of chopped chives
Salt and pepper to taste
Vegetable or sunflower oil to grease
Preheat oven to 200°C (180°C fan-forced). Grease 4 ovenproof dishes (approx size 1/2 cup) with oil. Crack one egg into each dish, divide the cream up between the four dishes evenly, and sprinkle with fetta, chives, salt and pepper. Bake for 10 minutes and serve with toasty fingers.
