Christmas is always a feast and usually there are leftovers and I find the following recipe a good way to use up left over chicken/turkey and ham.
1 cup of thick white sauce
2 cups of chopped cold meat (chicken/ham)
1 tablespoon parsley
1 tablespoon hot sauce
Combine all ingredients and roll into 1” balls. Chill (overnight for best results) Dip balls in egg and breadcrumbs and deep fry until golden.
Can be used as canapés or served with salad for light lunch
