Serves: Four

Time: Two hours

  • 2 tablespoons butter
  • 2 tablespoons plain flour
  • 2 cups milk
  • Pinch of nutmeg
  • 2 teaspoons dried parsley
  • 415g can red salmon, drained
  • 1 cup frozen peas, thawed

Mashed potato:

  • 750g potatoes, peeled and chopped
  • 1 tablespoon butter
  • 1/ 4 cup grated tasty cheese
  • 1/2 cup milk

Preheat oven to 200 ºC. Melt the butter in a pan and add the flour, stirring for one minute. Slowly add the milk, stirring to break up any lumps. Bring to boil, reduce heat and simmer for two minutes.

Add the nutmeg, parsley, salmon and peas. Season to taste. Pour into a one litre capacity ovenproof dish. Set aside. To prepare mashed potato, cook potatoes in boiling water for 15 minutes. Drain, return to pan. Add butter, cheese and milk and mash until smooth and creamy. Season to taste. Spread potato over salmon mixture and bake in oven for 30 minutes until pie is heated through. Serve with salad.
