Mexican Menage

For a real taste of South America, why not whip up this Mexican Menage?

Chicken Burritos

1 cup salsa
1/2 cup water
1/2 cup uncooked instant white rice
1 cup shredded chicken
1/2 cup shredded cheddar cheese
1/4 teaspoon garlic powder
1 packet of flour tortillas
1 chopped tomato
1 cup shredded lettuce


Heat oven to 190°C. In a saucepan, heat the salsa and water to boiling point. Stir in rice. Cover, remove from heat and let stand for five minutes.
Add to the rice mixture the cheese, chicken and garlic powder and stir. Spoon 1/2 cup of mixture into the centre of each tortilla. Fold the bottom 1/3 of tortilla over the filling and then fold in sides towards the centre leaving the top open. Place the tortillas in an ungreased glass baking dish seam side down and cover with foil.
Bake for 20 to 30 minutes and add lettuce and tomato before eating.

Beef Fajitas

450g beef sirloin steak cut into strips
1 tablespoon oil
1 red capsicum cut into strips
1 onion sliced and then halved
1 green capsicum cut into strips
1 cup of salsa
1 / 2 cup guacamole
1 / 2 cup sour cream
Packet of 8 flour tortillas

3/4 cup lime juice
1/4 teaspoon Worcestershire sauce
1/4 teaspoon soy sauce
1/2 teaspoon ground black pepper
1/2 teaspoon salt, or to taste

Mix the marinade ingredients together and place your sliced steak pieces in the marinade for no more than 1 hour. In a skillet, turn on medium-high heat and add some oil. When hot, add the steak and cook for 3 minutes. Then add the onion and capsicum and cook for a further 4 minutes stirring frequently. Add salsa and mix well. Reduce the heat to medium-low and cook until heated through stirring occasionally. Turn the heat off.
Heat your tortillas in the microwave for 2 minutes.
You can serve rolled up in the tortillas or sitting on top depending on preference. Top with guacamole and sour cream.

Pisco Sour

Serves 1

1/3 Cup Pisco
1/3 Cup Sugar
1/3 Cup Sweet Lime Juice
1/3 Egg White

Add all the ingredients to a shaker with ice. Pour into a glass (strain the ice) and strap yourself in!
