Potato and Egg Bake

Looking for a cheap meal that is nutritious and filling? Then our Potato and Egg Bake is it. And for much of the cooking time, you can sit back and relax while your oven does the job.

Serves: Four

Time: One hour


    • 600g Desiree potatoes, chopped
    • 1 red onion, chopped
    • 80g pancetta or ham, chopped
    • 200g cherry tomatoes
    • 1 tablespoon thyme leaves
    • 4 eggs
    • olive oil spray

Preheat oven to 190°C. In a large bowl add the potato, onion, pancetta and tomatoes and stir to combine. Divide mixture between four ramekins (10cm x 15cm). Spray with olive oil and bake for 45 minutes. Remove from the oven, make a hole in the middle of each mixture and break one egg into each hole. Sprinkle with thyme, then return to the oven and bake for 10 minutes. Season with salt and pepper and serve.
