Spicy rice for two

This tasty Spicy Rice brings a little taste of Mexico to your dinner table, so why not invite a friend over and get the fiesta started?

1 chorizo sausage, coarsely chopped
1 chicken thigh fillet, coarsely chopped
1/2 red capsicum, seeded, finely chopped
1/2 green capsicum, seeded, finely chopped
1/2 red onion, finely chopped
1 corn cob, husk and silk removed
1 garlic clove, crushed
1/2 tablespoons sweet paprika
1/2 cup medium-grain rice
1/4 cup dry white wine
1/2 cup tomato sauce
3/4 cup chicken stock
Sour cream, to serve
Coriander leaves, to serve
Lime wedges, to serve

Fry chorizo sausages in a pan over a medium heat for five minutes, then transfer to a bowl. Cook chicken for five minutes and set aside.  Add the capsicums, onion, corn and garlic to the frying cook for five minutes. Mix in the paprika and cook until aromatic. Add the remaining ingredients and bring to the boil.  Reduce heat, cover and cook for around 15 minutes until the liquid is absorbed.  Serve with sour cream, coriander leaves and lime wedges.
