Grilled Veggie Wraps

Our Grilled Veggie Wraps make an excellent midweek dinner, and are full of vibrant vegetables to look after your health. If you have unexpected guests, simply double the ingredients.

Serves: Two

Time: 10 minutes


  • 2 flour tortillas
  • 1 tablespoon sesame oil
  • 1 cup sliced cabbage
  • 1/2 red capsicum, sliced
  • 1/2 teaspoon dried thyme 
  • 1/2 teaspoon minced fresh ginger
  • 1 tomato, diced
  • 1 tablespoon dark soy sauce
  • 1 lemon
  • 1/3 cup grated cheese



Heat oil in a medium frying pan. Add the capsicum and cook until caramelised.

Add the thyme, soy, ginger and the lemon juice. Allow this to simmer until tender. Stir in the sliced cabbage and diced tomato, making sure to mix it well. Cover and let simmer until cabbage wilts. Warm the tortillas in the microwave. Spread the cooked veggies on the tortillas and sprinkle cheese over the top. Then fold the tortilla into a wrap and enjoy.
