Time: 10 minutes
- 2 teaspoons extra virgin olive oil
- 2 eggs
- 1/4 cup cheddar, grated
- 1 slice of leg ham, chopped
- 1 tablespoon chopped sundried tomatoes
- 3 fresh basil leaves, torn
Heat the olive oil in a pan over medium heat. Whisk the eggs in a small jug, until well combined, then season. Pour the mixture into the pan and cook for two minutes until the egg almost sets. Place cheese in the centre and top with ham, tomato and basil. Fold up the sides of the omelette to form a parcel. Drizzle with extra olive oil and garnish with some basil leaves. Serve with sourdough bread if you’re extra peckish.
