Spaghetti Frittata

Take a can of spaghetti, add a few more ingredients and you have a delicious frittata to serve for lunch.

Ingredients

  • 6 eggs
  • 1/2 cup milk
  • 1/3 cup parsley, chopped
  • 1 cup mushrooms
  • 1 cup tasty cheese, grated
  • 420 g can spaghetti

Method
Preheat the oven to 180 C.

Whisk the eggs and milk together. Stir in the parsley, mushrooms and half the cheese.

Grease a pie dish, spread the spaghetti over the bottom of the dish. Pour in the egg mixture and sprinkle with the remaining cheese.

Bake for 20-30 minutes. Serve hot or cold.
