Zucchini Nuggets

Summer is the season for zucchini, which gives you the perfect reason to try our recipe for Zucchini Nuggets. You will be pleasantly surprised with this healthy alternative.

  • 1 1/2 cups zucchini, grated 
  • 1/2 cup potato, grated
  • 1 egg, beaten
  • 1 tablespoon plain flour
  • 1/2 cup parmesan cheese, grated
  • 1/2 cup breadcrumbs
  • olive oil



Pre-heat the oven to 200°C and line a large baking tray with baking paper. Using your hands, squeeze grated zucchini and potato to remove excess liquid. Add the egg and flour and stir well. Place breadcrumbs and parmesan on a large plate and mix to combine. Shape teaspoons of mixture into small nuggets and then coat nuggets in breadcrumbs. Put on the baking tray and drizzle a small amount of olive oil over the nuggets. Cook for 25 minutes, turning nuggets halfway, until golden.
