For someone whose taste buds are more savoury than sweet, this simple marinated feta is a real Christmas treat.
350g Feta cheese – can be substituted for Haloumi or Saganki if vegetarian option preferred.
120 ml extra virgin olive oil
20ml red wine vinegar
1 teaspoon paprika
2 teaspoons freshly ground black pepper
3 dry red chilies
2 teaspoons dried oregano
2 teaspoons dried basil
Dice Feta into 1cm cubes and place in bowl.
In a separate bowl whisk together other ingredients.
Pour oil mixture over Feta and cover bowl.
Place Feta in fridge and allow to marinade for two days.
Place in a tightly sealed jar and decorate as desired. Feta will keep for about three weeks if refrigerated so don’t make too far in advance of Christmas.
