If you are looking for a flavoursome dish for dinner, but don’t have a lot of time to spend in the kitchen, this pasta dish has a little hit of chilli to awaken your taste buds.
- 250g fettucine
- 2 cups broccoli, cut into small florets
- 15ml vegetable stock
- 1 garlic clove, crushed
- 1/2 small red chilli, sliced
- 2 tablespoons natural yoghurt
- 1 tablespoon pine nuts, toasted
- Pepper, to taste
Bring a saucepan of water to the boil, add the pasta and cook until al dente.
Steam the broccoli until tender.
In the meantime, heat the stock in a pan, then add the garlic and chilli. Stir over a low heat for around three minutes. Add the broccoli, pasta and yoghurt.
Season to taste with pepper. Sprinkle over the pine nuts and serve immediately.
