Spiced Nuts

Great as a tasty treat when watching television or for whipping out when friends pop in unexpectedly, these Spiced Nuts are a perfect pantry staple.

1 teaspoon coriander seeds
1 teaspoon caraway seeds
1 teaspoon dried onion
1/2 teaspoon allspice
pinch dried chilli
125g mixed nuts
Freshly ground sea salt
Spray oil

Grind the caraway and coriander seeds in a mortar and pestle to a fine powder. Combine in a small non-stick frying pan with the onion, allspice and chilli. Add the nuts and spray lightly with the oil. Cook over a medium heat, tossing all the time. Spray a little more oil to ensure the mixture sticks to the nuts, you may need to do this one more time. Tip into a bowl and grind over some sea salt and allow to cool. Store in an airtight container and use as and when required.
