Passionfruit Custard Slice

Try this simple but scrumptious passionfruit custard slice for afternoon tea.


  • 200g packet Arnott’s lattice biscuits
  • 1/3 cup custard powder
  • 2 cups milk
  • 1/4 cup caster sugar
  • 1 cup icing sugar
  • 1 passionfruit


Grease a slice dish or line with baking paper. Place 12 biscuits in a single layer in the bottom of the dish. In a pot combine the custard powder and 1/4 cup of milk. Whisk until smooth, and then add the remaining milk. Add sugar, cook for five minutes until the custard boils, stirring constantly.

Set aside to cool. Pour over biscuits, top with another layer of biscuits. Refrigerate for an hour.

Sift icing sugar in a bowl. Stir in passionfruit pulp. Spoon the icing over the slice and refrigerate for another hour.

Cut into squares using the shape of the biscuits as a guide.
