Creamy Spinach & Mushroom Linguine with Sherry Sauce
The high soluble fibre content from the linguine and French bread allow for the healthy addition of insoluble fibre from whole wheat pastry flour and spinach. However, you should be aware if your own diet can accommodate this.
150 grams linguine
1 Tablespoons olive oil
2 Cups mixed wild mushrooms, cleaned, and chopped
2 Tablespoons whole wheat pastry flour
1 medium onion sliced
1 Cup of rice milk
1/2 Cup of cream sherry
1/2 Teaspoon whole grain mustard
1/2 Cup spinach leaves finely shredded
Salt and pepper to taste
Boil a pot of salted water and add linguine. Cook until tender and drain and set aside.
In a deep skillet, heat the oil and sauté the onion until soft. Add the mushrooms and continue to cook until they soften. Now sift the flour into the pan and gradually add the rice milk and stir until thickened and boiling. Set the heat to simmer, and add the sherry, mustard and spinach. Cook until spinach wilts over low heat. Add the cooked pasta to the sauce in the skillet and combine. If the sauce is too thick, add some water. Add salt and pepper to taste and serve with warm French bread.
