Whether you’re a vegetarian or not, this creamy mushroom pasta is simply delicious, but best saved as a special treat.
- 120g butter
- 1/4 cup flour
- 3 cups boiling water
- 1 cup sour cream
- 500g penne pasta
- 1 onion, chopped
- 3 teaspoons crushed garlic
- 500g mushrooms, coarsely chopped
- 1/2 cup each – mozzarella, tasty and parmesan cheeses
- 1/4 cup chopped parsley
Melt half the butter, add flour and cook for one minute. Add three cups of boiling water to mixture and stir until it boils and thickens. Stir in sour cream and simmer for five minutes.
Meanwhile cook the pasta according to the packet instructions, drain and set aside.
Heat the remaining butter and cook mushrooms, onion and garlic until soft and golden. Season with salt and pepper.
Combine the sauce, pasta and mushroom mixtures together and place in an ovenproof dish. Top with the cheeses and cook for 20 minutes. Sprinkle with parsley before serving.
