This simple and quick Creamy Pasta will become a fast favourite with the whole family. Follow the recipe or add extra vegetables to boost the flavour and variety. You will definitely be reaching for your second bowl!
- 500g of penne pasta
- 6 slices bacon
- 1 onion
- 2 large cloves garlic
- 1/2 teaspoon crushed red pepper
- 3 tablespoons sun-dried tomato pesto
- 3/4 cup cream
- 1 1/2cup shredded parmesan cheese
- 200g bag baby spinach
- 1/2 punnet of cherry tomatoes
Cook pasta in boiling water until al dente. Drain the pasta and keep 1/ 2 cup of pasta water.
In a large pan over medium heat, cook chopped bacon until crisp at the edges. Add the onion and cook until translucent. Add the garlic and crushed red pepper and stir for one minute.
Stir in tomato pesto and cream and bring to a simmer. Stir in half the cheese until melted then add the reserved pasta cooking water. Turn off the heat and stir in spinach. Add the pasta to the sauce and toss.
Place the pasta into a casserole dish and top off with tomatoes and sprinkle with remaining cheese. Bake in preheated 260º oven until browned.
