Fettuccine carbonara conjures up images of cream-laden pasta garnished with fatty bacon. But never fear, YOURLifeChoices has an indulgent pasta dish which won’t interfere with your diabetic meal plan.
1 teaspoon olive oil
100g lean bacon, chopped
6 tablespoons light crème fraiche
2 tablespoons fresh parmesan, grated
1 egg, beaten
2 tablespoons fresh parsley, chopped
salt and freshly ground black pepper
Cook the pasta and drain.
Meanwhile, heat the oil in a non-stick pan, add the bacon and fry for 4-5 minutes.
Mix the crème fraiche, parmesan, egg and parsley in a bowl. Pour it onto the pasta and add the bacon. Stir to combine.
Season and serve.
