Misers’ meatballs

The ultimate comfort food, tempt your tastebuds with Misers’ delicious meatballs.

One brown onion, finely chopped
450 gram freshly minced beef
2 tablespoons freshly chopped parsley
1/2 teaspoon dried oregano
1 beaten egg        
2 tablespoons olive oil

For the tomato sauce
1 tablespoon olive oil
1/2 onion, finely chopped
1 garlic clove, whole
1/2 teaspoon dried basil (or tablespoon of freshly chopped basil)
1 teaspoon sugar
salt and freshly ground black pepper
1 x 400g can crushed tomatoes

In a bowl, mix the minced beef with the chopped onion and herbs.
Add beaten egg and season with salt and pepper.
Divide the mixture into 20 round balls, patting into shape.
To make the tomato sauce, heat the oil in a heavy based casserole dish
Gently sauté onion and garlic, until soft.
Add crushed tomatoes, sherry, sugar, salt and pepper.
Simmer uncovered for approximately 20 minutes. Remove garlic clove.
Cook meatballs in 2 tablespoons of olive oil, 5 minutes either side.
When cooked, add to tomato sauce and simmer gently for a further 10-minutes

Serve with pasta of your choice – or massed potatoes and peas for an old fashioned sofa snack.
