Sicilian pasta

Just to keep the Godfather theme going a little longer, when we dined in Messina before reboarding the Nieuw Amsterdam, I chose what appeared to be a local specialty, Pasta Umutana.

It was simply delicious, but I had trouble locating a recipe. So here’s a similar one on YouTube from Rick Stein – so quick and easy for a one-dish dinner with a special glass of red.
