This quick and easy basil pesto can be whipped up in a matter of minutes. Impress your guests by serving it on freshly cooked al dente pasta.
Ingredients (makes 1/2 cup)
- 3/4 cup tightly packed fresh basil
- 1/4 cup pine nuts
- 1 garlic clove, chopped
- 1/4 cup grated parmesan
- 1/4 cup extra virgin olive oil
Put basil, pine nuts and garlic into a blender and mix until almost smooth, scraping down the edges as you go. Add the oil and the parmesan and blend until all the oil is combined. Enjoy as a quick-and-easy pasta sauce and be sure to refrigerate the leftovers.
